Can additional neutral bars be added to I-line panels in the field?

No, you cannot field install or modify the neutral capacity. This would void the UL label.
The panel would need to be ordered factory installed with a 200% Neutral.Adding the 200% rated neutral will double the terminal capacity in most cases.
