In a Modicon DRS switch, is it possible to obtain status data via Ethernet/IP without overwriting any parameters configured via the web interface?

Yes it is possible, as long as the EIP connection is changed to Input Only. By default, it is set to Exclusive owner, so when there is an EIP connection to the switch, the output data will override what is selected on the webpages. Please see example from M580 PLC DTM browser below.
