Can any of the EZM branch units that are configured for 3-Phase IN and 1-Phase OUT be field converted to 3-Phase IN and 3-Phase OUT branch units?

No, field conversion of branch devices that are 3-Phase IN - 1-Phase OUT CANNOT be converted to 3-Phase IN - 3-Phase OUT. This would void the UL listing and violate the NEC.
